A Tea Snob in the House


Since it seems that Matt has entered the world of tea snobdom I thought that it was time to bake up some goodies to enjoy with a great cup of tea (or coffee, for me). In search of a classic recipe, I first went to The Joy of Cooking since a friend of mine swore by the low-fat biscotti. Unfortunately for me, I was short the orange peel the recipe called for so I moved on to look for something that didn't require a trip to the store. Calling upon one of my favorite cooking blogs, I found this super recipe for cinnamon sugar biscotti on Annie's Eats.

I had big plans for these biscotti. As they baked in the oven I had visions of enjoying a couple with a fresh cup of coffee the next morning. Little did I know, they were so yummy that we wound up eating them all that afternoon and I only got to try one bite dipped in a cup on Matt's earl grey. I guess I'll just have to make another batch sometime soon so I'll be able to live out my dream.



Cinnamon Sugar Biscotti
Taken from Annie's Eats
Ingredients:
For the dough:
2 cups all-purpose flour
1½ tsp. ground cinnamon
1 tsp. baking powder
¼ tsp. salt
1 cup sugar
6 tbsp. unsalted butter, at room temperature
1 large egg plus 1 large egg yolk
1 tsp. vanilla extract

For the topping:
¼ cup sugar
1 tsp. ground cinnamon
1 large egg, lightly beaten

Directions:
Preheat the oven to 325˚ F. Line a baking sheet with parchment paper or a silicone baking mat. In a medium bowl, combine the flour, cinnamon, baking powder, and salt; whisk to blend and set aside. In the bowl of an electric mixer, cream together the butter and sugar on medium-high speed until lightly and fluffy, 3-4 minutes, scraping down the bowl as needed. Blend in the egg and then the egg yolk, beating well after each addition. Blend in the vanilla until incorporated. With the mixer on low speed, blend in the dry ingredients just until incorporated and a dough is formed.

Divide the dough into two halves. Shape each half into a log 9 inches long by 1½ inches wide on the prepared baking sheet, spacing the logs at least 3-4 inches apart. In a small bowl, combine the sugar and cinnamon for the topping and stir to blend well. Lightly brush the tops of the logs with the beaten egg, and sprinkle generously with some of the cinnamon sugar mixture.
Bake for 40-45 minutes, rotating halfway through baking, until the tops are golden brown and slightly firm to the touch. Remove the pan from the oven but maintain the oven temperature. Once the logs are cool enough to handle, slice on the diagonal into 1½-inch slices (about 10-12 per log). Place biscotti cut side-down on the baking sheet and sprinkle with more of the cinnamon sugar mixture. Bake an additional 10-15 minutes, until crisp and golden.

A Valentine Treat!




Valentine's Day has come again and it just seems like any other day. I decided that I needed to spice up my afternoon by baking something delicious for tonight's dessert. That's when I remembered this great recipe that I had stumbled onto a while back for a fabulous chocolate cake. It's that type of cake that is great when you make it but even more moist and yummy the second day. Although I'll enjoy my piece tonight I'll be looking forward to a piece (or two) tomorrow morning.




Chocolate Chocolate Chip Cake Recipe

Ingredients:
1 chocolate cake mix
1 package instant chocolate pudding
1 c. canola oil
4 eggs
1/2 c. hot water
1 c. sour cream
1 tsp. vanilla
1 c. chocolate chips


Directions:
Preheat oven to 350. Combine all ingredients except chocolate chips and beat until smooth. Stir in chocolate chips. Pour batter into a greased bundt pan. Bake for 1 hour. Allow to cool then remove from pan. Dust with powdered sugar.

I've been thinking for some time that I'd like to start a blog highlighting some of the interesting tidbits of my life at home and I'm finally putting that thought into action. I'm sure what this will end up turning into. Something tells me that it's going to be a random collection of thoughts, recipes, and funny antics about the kids and life in general. All in all, I hope it turns into something interesting that other people will enjoy reading from time to time.
